Just learned a Green Bell Pepper turns red when maturing. I always thought they were two different peppers. By leaving the pepper on the vine longer it also becomes more nutritious and less bitter. Vitamin C content doubles, vitamin A content is eight times higher, and beta carotene nearly triples! Red peppers are also a good source of Lycopene and antioxidants. Red Bell peppers are better for you than Green Bell Peppers if you can wait.
